BUNDT CAKE DE PIÑA, COCO Y RON.

Hola cocinillas! Otro mes más, nos reunimos para uno de mis momentos favoritos del mes: EL RETO DE HACER UN BUEN BUNDT CAKE!. Además, por fin me he comprado un molde nuevo, un molde que a pesar de ser mi favorito ha tenido que esperar un par de años. ¡Cosas chungas de la vida!

El reto de este mes ha sido realizar un bundt cake relleno, este reto viene de la mano de dos blog:Uno de ellos seguro que lo conoceís:

  • Bizcocheando: Tiene varias recetas en español y tienen una pinta de muerte!, no entrar si estáis a dieta, aunque si estaís aquí poco os impide ir....¡Gordos!, :). 
  • Patty’s Cake: este blog tiene unas fotos estupendas y super curradísimas, no he hecho nunca una receta suya, pero u receta sobre twinkies tiene un pinta espectacular.





Aunque el reto pueda parecer sencillo. Para mí ha sido Como un caballo de Troya. Si si, al principio muy bonito pero luego...
Con los primeros intentos llegaron los problemas "técnicos":
                        Entonces, surgió la gran pregunta: ¿ Rellenar después de hornear o antes?


A mí personalmente no me gusta rajar el bundt cake por la mitad y rellenar a lo tarta, no sería superar el reto del todo. Y evitando esta opción las pruebas pasaron ....., y tras cinco bundt cakes casi perfectos, no lograba conseguir que el relleno se quedase ajustado en el centro...
Los días pasaban...

Pero ... Al final!

La bombilla se encendió.

¿ Qué pasa si rellenamos el bizcocho desde la base?

Pues esto es lo que pasa:

                                                 Un bundtcake relleno y perfecto! 

Espero que os guste la receta, ya que es la primera de las que he hecho, que introduce este concepto y creo que es perfecto si no quieres rellenar desgraciando el bizcocho. Ojo! Que si lo haces bien y marcas bien el corte no queda nada mal.

INGREDIENTES:

  • 250 grs de azúcar blanco
  • 125 ml de aceite de girasol
  • 5 huevos M
  • 250 gr de harina
  • 1 yogurt griego.
  • 50 grs de coco rallado
  • 200 gramos de puré  de piña en almibar.
  • 2 cucharadas de ron.
  • 1 tsp de bicarbonato
  • 1 tsp de polvo de hornear o levadura química

ELABORACIÓN:

  1. Precalentar el horno a 180º, calor abajo. Y engrasar bien un molde de bundt cake, yo he empleado un spray desmoldante..
  2. Batir el aceite junto al azúcar hasta que quede bien integrado.Después, añadir los huevos uno a uno. Cuando este bien homogéneo, añadir el puré de piña.
  3. Tamizar la harina junto al bicarbonato y la levadura. Agregar los copos de coco y mezclar bien. Agregar la harina reservada y la leche de coco junto al ron  de forma alterna y en dos veces. Empezaremos con la harina y finalizaremos también con la harina integrando bien toda la mezcla.
  4. Verter la masa en el molde e introducir en el horno durante aproximadamente 50-60 minutos o hasta que al introducir un palillo  salga limpio. (El relleno se lo añadimos después)

Relleno:

100 gramos de crema pastelera.
50 gramos de coco(Aprox).

Mezclamos la crema pastelera con el coco, y cuando tenga una textura densa dejamos de añadir más.

Como rellenar:
Cuando salga el bizcocho del horno quitamos un anillo de la base del bunt cake con un cuchillo  y rellenamos(Figura). ¡Cuidado!


Decoración:
Expolvoreamos coco rallado.

INGREDIENTS:

  • 250 grs sugar
  • 125 ml oil
  • 5 eggs, size M
  • 250 gr flour
  • 1 Greek yogurt
  • 50 grs Shredded coconut
  • 200  crushed pineapple
  • 2 tsp of ron.
  • 1 tsp of baking soda
  • 1 tsp baking powder
ELABORATION:

  1. Preheat oven to 180 °, heat down. And to grease well a bundt cake mold, I have used a mold release spray .
  2. Beat the oil next to the sugar until it is well integrated.Afterwards, add the eggs one by one. When this is well homogeneous, add the crushed pineapple
  3. Sift flour together with baking soda and yeast. Add the coconut flakes and mix well. Add the reserved flour and coconut milk next to the rum alternately and twice. We will start with the flour and finish with the flour, integrating the whole mixture well.
  4. Pour the dough into the mold and put it in the oven for about 50-60 minutes or until a toothpick comes out clean. (The filling is added later)


Filling

100 gr of custard 
50 Shredded coconut (Aprox).

We mix the custard with the coconut, and when I have a dense texture, we stop adding more.

How to fill in: When the cake comes out of the oven we remove a ring of bunt cake with a knife and fill (Figure).




Decoration: We sprinkle grated coconut.
